I like the Option 1. I used to belong to a Book Club and this is what we used to do. As I have never read a ‘Quilting’ Novel before I look forward to the recommendations.

I think option one would be good, but if someone hadn’t finished in the proposed time frame, or they just didn’t like the book they could just not enter into the discussion.
